Salad with grilled peach and cheese

A light and flavorful salad with grilled fruit, blue cheese and protein bread. Perfect as dinner or second breakfast at work.

Portions: 2 Time: 20 minutes Difficulty: medium

 

Ingredients:

  • 2 slices of Protein Bread with coconut flakes Beak Beak
  • 1 large peach or 2 small ones
  • Half a small red onion
  • 50 g of Parma ham
  • 40 g of Gorgonzola Piccante cheese
  • 200 g of your favorite salad mix

Dressing:

  • 3 tablespoons of olive oil,
  • juice from half a lemon,
  • 2 teaspoons of grainy mustard,
  • 2 teaspoons of liquid honey,
  • half a teaspoon of chopped thyme,
  • salt to taste

 

Instructions:

Cut the peach into pieces and grill it on both sides in a pan.

Finely chop the red onion into rings, cut the slices of ham in half, and crumble the Gorgonzola cheese.

Place the dressing ingredients in a small jar, seal it, and shake vigorously for a few seconds until you have a uniform sauce.

In a bowl, combine the salad mix, peach slices, cheese, ham, and the sliced Protein Bread. Drizzle the salad with the dressing and sprinkle with onion rings.

Serve immediately after preparation.
