4 slices of Beak Beak Pure Grain Bread with cranberries
2 tablespoons of olive oil
1 garlic clove
1 young and undeveloped zucchini
Juice from half a lemon
120 g of canned white beans (weight after draining)
2 teaspoons of oregano and thyme leaves
Salt and pepper to taste
• Cut off the ends of the zucchini, slice the vegetable lengthwise into thin strips. Heat a grill pan or an electric grill. Grill the zucchini for 3 minutes on each side.
• Transfer the cooled zucchini to a bowl, add beans, pressed garlic, pour in olive oil, lemon juice. Finely chop the herbs, add them to the bowl, mix everything thoroughly, season with salt and pepper. Set aside in a cool place for an hour.
