Pear and parsley soup with croutons

  • 2 slices of Pure Grain Natural Bread Beak Beak
  • 1 onion
  • 600 g of peeled parsley root
  • 2 small pears
  • About 500 ml of vegetable broth
  • Half a teaspoon of freshly grated nutmeg
  • Salt and pepper to taste
  • Cooking oil



  1. Dice the onion, slice the parsley root, and peel the pears. Remove the seeds from the pears and cut them into larger cubes.
  2. In a pot with a thick bottom, heat some cooking oil. Add the diced onion and sauté for 5 minutes. Then add the parsley root and continue to sauté for about 10 minutes. Finally, add the pears and sauté briefly.
  3. Pour just enough vegetable broth into the pot to cover the vegetables. Cook with the lid on until the parsley root becomes tender, about 10-15 minutes.
  4. Allow the soup to cool slightly, then blend it into a smooth cream. Season with freshly grated nutmeg, salt, and pepper.
  5. Divide the bread into small pieces and briefly toast them in a dry pan until they become crispy.
  6. Serve the soup with the addition of the bread croutons.
