Pear and parsley soup with croutons

Ingredients:
- 2 slices of Pure Grain Natural Bread Beak Beak
- 1 onion
- 600 g of peeled parsley root
- 2 small pears
- About 500 ml of vegetable broth
- Half a teaspoon of freshly grated nutmeg
- Salt and pepper to taste
- Cooking oil
Instructions:
- Dice the onion, slice the parsley root, and peel the pears. Remove the seeds from the pears and cut them into larger cubes.
- In a pot with a thick bottom, heat some cooking oil. Add the diced onion and sauté for 5 minutes. Then add the parsley root and continue to sauté for about 10 minutes. Finally, add the pears and sauté briefly.
- Pour just enough vegetable broth into the pot to cover the vegetables. Cook with the lid on until the parsley root becomes tender, about 10-15 minutes.
- Allow the soup to cool slightly, then blend it into a smooth cream. Season with freshly grated nutmeg, salt, and pepper.
- Divide the bread into small pieces and briefly toast them in a dry pan until they become crispy.
- Serve the soup with the addition of the bread croutons.
